Creating the Perfect Sourdough: A Step-by-Step Guide

When embarking on your sourdough journey, follow this simple outline to ensure success:

  1. **Prepare Your Starter**: Make sure your sourdough starter is active. Feed it and let it sit at room temperature until it doubles in size, typically about 4 to 12 hours.
  2. **Autolyse the Dough**: Combine your chosen flours with water in a bowl. Allow it to rest for about 30 minutes. This step helps hydrate the flour and contributes to gluten development.
  3. **Incorporate Your Ingredients**: After the autolyse, add your sourdough starter and salt. Work the mixture until it's well incorporated.
  4. **Bulk Fermentation**: Place the dough in a lightly greased bowl, cover, and allow it to rise until it doubles in size. Depending on your ambient temperature, this could take anywhere from 4 to 8 hours.
  5. **Shape & Rest**: Once your dough is nicely risen, turn it out onto a clean surface, shape it as desired, and allow it to rest—for about 15 minutes—before placing it in a floured proofing basket or bowl.
  6. **Cold Proof**: For optimal flavor, refrigerate the dough overnight (up to 12-15 hours) to develop a deeper taste.
  7. **Preheat the Dutch Oven**: Around an hour before baking, preheat your oven to 500°F while placing the Dutch oven inside to heat up.
  8. **Bake Your Masterpiece**: Once preheated, carefully place your dough inside the Dutch oven, cover with the lid, and bake for 20 minutes before removing the lid to allow the crust to develop for an additional 25 minutes.
